Bean, Corn, and Pepper Salad

Ingredients

  • 2 cups canned black beans
  • 1 cup frozen yellow corn
  • 1/2 medium sweet red pepper, diced
  • 1/2 medium sweet green pepper, diced
  • 1/2 medium sweet yellow pepper, diced
  • 2 tbsp scallions, chopped
  • 1 tbsp olive oil
  • 1 tbsp frozen apple juice concentrate
  • 1 tbsp balsamic vinegar
  • 2 tbsp salsa
  • 1/2 tsp salt
  • 1/8 tsp black pepper

Preparation

  1. Rinse and dry beans.
  2. Combine beans, corn, peppers, and scallions in serving bowl.
  3. Mix together remaining ingredients and pour over bean mixture.
