Ingredients
- 3 cups of rolled oats
- 1 1/2 cups of low-fat milk
- 2 ripe bananas, mashed
- 1/3 cup packed brown sugar
- 2 large eggs, lightly beaten
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 cup fresh blueberries
- 1/2 cup chopped, toasted pecans
Preparation
- Preheat oven to 475 F
- Coat a muffin tin with cooking spray
- Combine oats, bananas, milk, brown sugar, eggs, baking powder, cinnamon, vanilla, and salt in a large bowl
- Fold in blueberries and pecans
- Pour the mixture evenly into the muffin tin
- Bake for 25 minutes
